In detail

What it is, and who it is for.

A plain-English, UK-only allergen system for independent cafés, pubs and restaurants. It takes the allergen question from the supplier to the table, link by link, and tells you at every step what the law says, what official guidance adds and what works on a busy shift.

Who it is for

Owners, general managers, head chefs and supervisors of independent cafés, pubs and restaurants in England, Wales, Northern Ireland and Scotland. Busy, practical people who are not lawyers.

What’s inside

Eleven short chapters: the 14 allergens; the law in plain English; Natasha’s Law and the PPDS label; loose food and the FSA’s 2025 best practice; suppliers, specs and recipe allergen cards; the allergen matrix and menu changes; storage, cross-contact and cleaning; taking the allergen order; when it goes wrong; training, records and the EHO visit. Each chapter has a diagram, a table or checklist, and a short list of things to do before your next service.

How it treats the law

Every legal statement is quoted from the Food Standards Agency, Food Standards Scotland or the legislation, with its source, read at source on 27 October 2026. Law, official guidance and good practice are always labelled, so you know which one you are reading. Where Scotland differs, a box says so.

The templates

Eight A4 templates: allergen matrix, recipe allergen card, supplier specification check, allergen order checklist, menu-change sign-off, staff training record, cleaning and cross-contact checklist, and allergen incident log. Plus an A4 reaction card for the phone. Print as many as you need for your own business.

What it is not

General guidance, not legal advice. It doesn’t replace your local authority, and in a suspected reaction it says one thing: call 999 and follow the NHS guidance for your nation.

Before you buy

  • Not advice. The book gives general guidance on UK food allergen law and good practice, with sources, so you can run your own system and ask better questions. It is not legal, medical or food-safety advice for your business. Check the latest guidance from the FSA or Food Standards Scotland, and your local authority.
  • Law dated. Edition 1.0. The law and guidance were read at source on 27 October 2026, and each source and its date is listed in Appendix B. One point the official pages don’t settle is marked, with what to do about it.
  • How it was made. The text was drafted by an AI system (Claude, Anthropic) from the author’s brief and the official pages, read at source and cited. Further AI passes then checked it line by line against those sources, and for voice and consistency. The author is responsible for every claim in it. The diagrams and templates are drawn by code; the cover is a typographic design. The scenes are composites and the Corner Café is fictional.
  • Corrections. Confirmed errors are fixed and buyers get the corrected edition free. Report one through the contact page.
  • Refund. Full refund on request for 14 days.

Questions

What format is the book?
PDF (138 pages, 6 × 9 in, colour figures, bookmarked) and EPUB, which reflows on a phone or e-reader. Both are yours to keep.
Are the templates free anyway?
Yes. The eight A4 templates and the reaction card are free at /allergen-safe/templates, with no sign-up. The book editions include them so the book and its templates sit together in your library.
What’s the difference between £12.99 and £24.99?
£12.99 is the book (PDF and EPUB) with the templates and the reaction card. £24.99 adds the Allergen Matrix, the operator’s edition: an Excel workbook that works out each dish’s allergens from your ingredient tags, plus its seven-page pack. Bought separately, the two cost £31.99.
Does it cover Scotland?
Yes. It covers England, Wales and Northern Ireland (the Food Standards Agency) and Scotland (Food Standards Scotland). Where Scotland’s rules, guidance or tools differ, a box in the chapter says so.
Is it legal advice?
No. It is general guidance, with every legal line quoted from its source and dated. For your own business, check the latest FSA or FSS guidance and ask your local authority.
The matrix in the book uses C and M. Why does the Allergen Matrix workbook add C*?
The book’s printed matrix (Template 1) uses C for contains and M for may contain. The Excel workbook adds C* for dishes that can be made without that allergen on request, and its dish card says exactly how. Both use the 14 allergens in the same order.
